Steamed Herbal Chicken

Ingredients

  • 500g chicken (or 2 drumsticks)
  • ½ tsp sugar
  • 1 tsp soya sauce
  • ½ pepper
  • ½ salt
  • 1 tsp sesame oil
  • 2 slices old ginger
Chinese Herbs

  • 20g Codonopsis (Tong Sum)
  • 20g Dioscorea (Wai San)
  • 10g Angelica (Tong Kwaii)
  • 25g Medler Seeds (Kei Chi)
  • 2 pieces Astragalus (Pak Kay)
  • 5 red dates
  • 1 piece aluminium foil
Method
  1. Clean chicken and marinate with seasoning.
  2. Heat wok with 1 tsp of sesame oil. Fry ginger till fragrant.
  3. Add in herbs and 2 tbsp of hot water. Stir for 2 to 3 minutes. Dish out and put aside.
  4. Place the aluminium foil into a deep dish. Place the chicken in the center and add in the herbs. Bring both side of the aluminium foil together and fold together. Twist the both end to seal.
  5. Bring a steamer to boil. Place the deep dish with the bundled chicken to steam for 1 to 1 ½ hours.
